The Wine
Uncompromised sparkling wine, free from alcohol.
It begins in Robertson, South Africa: limestone-rich soils, cool ripening nights, and Chardonnay with the natural acidity and mineral backbone the world's great sparkling wines are built on.
The wine is made with craft: extended time on the fine lees, stirred weekly for up to a hundred days, building texture and depth the slow way.
Only then is the alcohol removed: gently, over no less than 30 hours, by vacuum distillation. No heat, chemicals or shortcuts. The structure and aromatics stay exactly where they belong: in the glass.

Each edition features carefully reproduced artworks by the artists who helped shape the story of African art, selected by our Chief Curator & Cultural Director, Elana Brundyn, founding CEO of Norval Foundation and an inaugural director at Zeitz MOCAA.
